Cowboy Caviar

Cowboy Caviar is one of my favorite recipes for football tailgates or a night of entertaining. This is basically a ‘re-vamped’ version of salsa. While this recipe is quite healthy, it is extremely addicting.

Salsa

Cowboy Caviar

Ingredients :

  • 1 Can Black Eyed Peas, drained & rinsed
  • 1 Can Corn
  • 1 Avocado, chopped
  • 1 Small Onion, diced
  • 1 Medium Jalapeño, minced & seeded if you do not like the extra heat
  • 2 Cloves of Garlic, minced
  • 3 Cans of diced Tomatoes [fresh are always better if you have them]
  • 2 Tablespoons Red Wine Vinegar
  • 6 Tablespoons Olive Oil
  • 2 Teaspoons Franks Hot Sauce {I tend to use more because I love spice}
  • 1/2 Fresh Cilantro, chopped
  • Salt to Taste
  • Pepper to Taste

Combine all ingredients and refrigerate at least 2 hours prior to serving.

When ready, serve with tortilla chips.

Savannah’s Rosemary Sip

Growing up in the South, I have learned that there are very few things comparable to a nice cold beverage on a warm day. Perhaps, there is nothing better than walking out into your garden and finding fresh ingredients to use in your own homemade ‘sip’. 
{My mom and I sipped on these while watching the Kentucky Derby.}

DrinkSavannah’s Rosemary Sip

Ingredients :

  • 8 Teaspoons Fresh Rosemary (Plus additional to garnish)
  • 2 1/2 Cups Sugar
  • 1 Cup Freshly Squeezed Lemon Juice
  • 12 Cups Water
  • 1 Cup Bacardi Limon (You can change depending on your own desire)

Preparation :

  1. Mix rosemary, water & sugar in a saucepan and bring to a light boil for 5 minutes.
  2. Strain out the rosemary.
  3. Pour the mixture into the other 9 cups of water lemon juice and Bacardi.
  4. Shake well.
  5. Garnish with Rosemary or Mint. (Or both!)

Turkey Meatloaf

With this terribly yucky weather outside, I decided I wanted to make a delicious and warm meal to enjoy. When I went to my favorite store {SAMs} I bought two big packs of turkey meat, so I knew this recipe would be perfect–

Ingredients :

  • 1 1/4 lbs Ground Turkey
  • 1 Cup Chopped Onion
  • 3 Garlic Cloves, minced
  • 1 Egg
  • 1/2 Cup Breadcrumbs
  • 1/2 Cup Brown Sugar
  • 3/4 Cup Ketchup
  • 1/4 Cup Yellow Mustard
  • 2 1/2 Tablespoons Olive Oil or Butter
  • 2 Teaspoons Worcestershire  Sauce
  • 3/4 Teaspoon Salt
  • 3/4 Teaspoon Pepper

Preparation :

  1. Preheat the oven to 350 degrees.
  2. Melt the Olive Oil or Butter in skillet.
  3. Sauté the onion and garlic for 5 minutes. {Stir occasionally.}
  4. Remove the onion and garlic from the skillet and let cool.
  5. Combine the rest of the ingredients {turkey, egg, breadcrumbs, 1/4 Ketchup, mustard, worcestershire, salt & pep} into a large mixing bowl.
  6. Add in the onion and garlic and mix all together.
  7. Transfer the meatloaf mixture into a {greased to cut down on the clean-up process} loaf pan and press flat.
  8. Cover the top of the meatloaf mixture with the remaining ketchup. 
  9. Place in over and bake for 50-55 minutes.

My most favorite way to enjoy meatloaf :

  • Get a sheet pan and lay tinfoil down on it {to cut down on the clean-up process}
  • Cut a few pieces of the meatloaf and lay on the tinfoil.
  • Put more ketchup on the slices and put in the over on medium/low broil for aprox 10 minutes. {I love when the ketchup has browned a bit}
  • Toast a slice of my homemade bread.
  • Put a bit of mustard on the toasted slice.
  • Lay the meatloaf on top and ENJOY!

Birchbox : April

After my March Birchbox, I felt so spoiled. I loved all of my samples and was very pleased with the results.
So, my hopes were set extremely high for my April box.

  1.  Beauty Protector : Protect & Detangle  {Great for all hair types, this nourishing elixir perform seven hair-healing functions. Among them : locking in color, adding shine, and instantly detangling. Full-size $21.95} This product is GREAT! My mom received this in a previous box, so I got to try it beforehand, and I completely fell in love with it. After a few squirts, my hair is ready to be brushed out and styled! I would recommend this product–
  2.  Supergoop! : Daily Correct SPF 35 CC Cream {This next-generation CC cream provides corrective coverage and triple protects against UVA, UVB, and infrared-A rays. Full-size $32.} First off, I was slightly disappointed with the sample size. I tried this product for the first time this morning and it seems like it is a good product, I just don’t know if I will be able to get a good enough ‘review’ based off of the sample size. I hope that it does work, as I do need corrective coverage, but after only 2 uses, will you really be able to tell? Maybe I can get a few more uses to determine!
  3.  LAFACE Laboratories : BEAUX YEUX Beautiful Eyes Concentrate Intensive {A hefty dose of hyaluronic acid amps up moisture levels, while an advanced peptide complex halts wrinkle formation. Full-size $160.} This must be a joke. No, I have not tried the product, but based off of the sample size I have already made my decision. If a product cost $160, I would personally think that you would give a ‘bigger sample’ so prospective buyers could fall in love with the product. Rather than only getting a 1 time use. Also, I wouldn’t spend $160 on this so…for me…this is a no-go.
  4.  Caudalie : Devine Oil {Made with a blend of grape, argan, hibiscus, and sesame oils, this multitasking wonder gives skin, hair, and nails a gorgeous glow. Full-size $9-$49.} I just opened my sample of this an it smells great! So, I am anxious to try this product. I have never been a fan of oils due to the ‘reside-sticky feeling’ it leaves on your skin, yet this doesn’t seem to be that way!
  5. Lifestyle Extra : Hail Merry : Chocolate Macaroons {It tastes too good to be true : These decadent treats are raw, vegan, gluten-free, and made with only natural, non-GMO ingredients. Full-size $5.} I have not tried these, but I am sure they are delicious!

Another addition to the box is a year of Women’s Health subscription for free. This excites me, however I could see that others wouldn’t get excited about this. I’m wondering how this box relates to Fitness, but I suppose that’s my own personal opinion. Overall, this was a good box. Not my favorite, but good.

Help In the Garden?!

Since the weather is so unbelievably nice, I can’t help but spend all of my time outside!

Today, I had a few more things to plant in my garden that I bought on Sunday, and I noticed that Jen’s was willing to be my ‘co-green-thumb’…So, I ran inside to get my phone and came back out and noticed that my ‘co-green-thumb’ had decided this was her way to help…

Garlic’s-On-The-Way

Since I have never grown garlic before, I am ectremely anxious to see how it turns out! Of course, I have grown many other things, I’ve just never taken on the task of garlic.

Barbie Wedding Weekend Re-Cap
